All hand wash stations had soap, paper towel, hot and cold running water.
All coolers 4C or less (deli display cases, prep cooler, retail coolers, olive bar, walk in cooler downstairs...etc)
Bulk cheese containers stored in retail open face cooler unit at 4C. Covering containers appeared clean with self closing lids. Scoops to dispense cheese of adequate length to prevent contamination. Ensure this area is monitored by staff.
Freezers less than -18C (walk in downstairs, reach in retail freezers...etc).
Hot holding of soup 63C. Soup is made at the cucina location next door. Soup has self closing lid and ladle of sufficient length.
Staff confirmed that meat slicers are used throughout the day and are taken apart and cleaned/sanitized minimum once every 4hrs.
Air compressor and sanitizer (spray bottle) available for cheese grater - this sanitation plan/procedure was approved by the previous district inspector (revised procedures posted on wall).
Covers available for for bulk bread racks.
Uncovered breads on display for customers to take on top of deli display coolers under staff supervision - tongs available.
Chlorine sanitizer 100ppm in containers with cloths submerged.
Quat sanitizer dispenser at warewashing sinks 200ppm.
Reviewed manual ware washing procedures with manager at time of inspection.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
Refrigerated delivery trucks no longer at premise. They are stored at the warehouse.
Outside storage unit (shared with cucina) appeared clean and well maintained. No signs of pest activity.
Downstairs area in premises is mainly a staff area with some prepackaged food storage and extra equipment storage (ie. not a food handling/preparation area).
