Observation (CORRECTED DURING INSPECTION): 2 containers of tempura yams and 2 containers of tempura prawns were cooling on the counter without time tracking. Internal temperatures were 27.9 Celsius, 36.5 Celsius, 24.1 Celsius, and 25.0 Celsius.
All discarded. All cooked foods are potentially hazardous and must be kept at appropriate temperatures.

A new bar fridge has been added to the kitchen near the front line; good. Fridge measures 3 Celsius.
Cleaning cloths are in a prepared bleach solution; 200 ppm.
Given significant improvement a violation ticket will not be issued today.
Further temperature control violations will be ticketed.
