Sanitizer (Quats) available at proper concentrations.
Food items were protected from contamination and prepared foods in the walk-in cooler were labelled and dated.
Walk-in freezer was at -19 deg C.
Walk-in cooler was at 1-3 de gC.
Keg walk-in cooler was at 3-4 deg C.
All line coolers were meeting temperature requirements.
Hot holding for hot foods was above 65 deg C.
Temperature log was available and up to date.
Glass washer in the kitchen had chlorine of 100 ppm (plate surface).
Low temp . dishwasher had 50 ppm chlorine.
Kitchen staff were wearing clean uniform, aprons and hair restraint.
Note: Ensure dishwashing area has one way flow of dirty to clean side.
Back area (storage and garbage disposal area) was clean and organized.
No signs of pests noted. Pest control monitoring in place.
Staff washrooms provided with liquid soap and paper towels.
Servery area:
Hand wash stations properly maintained.
Coolers were at 4-5 deg C.
Bar area:
Hand wash stations supplied with liquid soap and paper towels.
Coolers were at 3-4 deg C.
Sanitizer measured 200 ppm (Quats).
Dining room area and washrooms were in sanitary condition.
Note: Food Safety Plan for beef carpaccio was provided at time of inspection.
