Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
-Some paper towel dispensers have broken lids or other parts broken - operator has called and ordered new ones.
o Operators had clean clothing for food preparation
o Staff washrooms appear clean and are fully supplied for hand hygiene
o Public washrooms are clean and fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
- Additional cold holding at the bar is 4C.
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C

Food Processing and Food Protection
o Cooking - Temperatures are being monitored
o Cooling - Temperatures are being monitored; cooling is done in small batches. Small containers for storage and portioning of sauces.
-All coolers have dials or other thermometers inside with food, great job.
o Approved Food Source - Food items are from supplier and approved source.
o Food Storage - Food is stored in covered containers.
-Raw meats are stored on the lowest shelf and coolers are organized to prevent cross contamination
-Seacan at the back - no food storage, food container and other equipment storage only. Area is organized and items are on racks or shelving. No signs of pests. Door remains closed for security.

Maintenance and Sanitation
o 2 Compartment Sink is fully supplied with 200ppm Quats for sanitizing (400ppm Quats measured)
o Dishwasher - Final rinse temperature is >71C at the plate surface (72.8C temperature measured at final rinse)
o Glasswasher - 50-100ppm Chlorine (75ppm measured)
o Chemical dispensers - Quat sanitizer dispensed from tube in wall at the back
o Sanitizer bottles/buckets - have 200ppm Quats (400ppm measured)
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
- At the bar - porous stone has been sealed with cleanable surface (epoxy), no issues with flies observed during this visit. Great job!
o Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
- Fly lights are in place at the bar.
- Monitor with seasonal changes.
-Great job with keeping the floors and walls clean - no signs of food debris in kitchen or hard to reach spaces. Keep up the good work.
