A) Cooked Rice - Discussed. Cooled cooked rice sometimes put directly in hot holding unit.
B) Cooked chicken (breats/whole) - Unit holding food below 60 C.
Corrective Action(s): A) Ensure rice is always reheated to 74 C prior to placement in hot holding unit.
B) Ensure cooked meats always hot held above 60 C. Ensure unit is turned up sufficiently to perform function.

B) Raw meat stored above ready to eat foods in walk-in cooler. Limited space to accomodate all raw meats in separate area in walk-in.
Corrective Action(s): Store raw and cooked meats separately. Separate containers in same part of cooler not acceptable.
