Premise is very clean and organized.
Quats sanitizer in use - 200 ppm. Good.
Dishwasher has 100 ppm chlorine in final rinse.
No sign of pests.
Hot holding was > 60 celsius.
Fridges are all < 4 Celsius with the exception of the small cooler labelled #2. No perishables were stored in this unit and it is scheduled for repair. Great!
Hand sink is stocked and working.
Utensils were stored in sanitizer at the time of inspection; this is no longer allowed. You may use ice water or a hot-holding unit, or a clean dry container and switch for clean utensils every 2 hours. Discussed. Utensils were removed for dishwashing immediately.
