306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food spills and grime noted throughout the kitchen. Deep fryer is not maintained in a sanitary manner.
Corrective Action(s): Deep cleaning is required. Large equipment shall be pulled out for thorough cleaning of hard-to-reach areas. Deep fryer requires cleaning. Surfaces of equipment (ie. rice cooker) requires cleaning.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: 1. Lining on shelves located beside the deep fryer shows signs of wear.
2. Flooring throughout the kitchen is blackened and shows signs of wear. Duct tape is in place to cover exposed areas on the floor, which is not easily cleanable.
3. Some ceiling panels are damaged.
4. Caulking at the dishwashing area is blackened.
Corrective Action(s): 1. Shelves noted above shall be repaired or replaced to ensure that all surfaces are durable, non-absorbent and easily cleanable.
2. Flooring requires serious attention as it is repeatedly observed to be left not taken care of. Damaged parts on the flooring makes it difficult to maintain the food premises in a sanitary condition. Cracks on flooring are not smooth nor easily cleanable, which may lead to accumulation of moisture and food debris, attracting pests.
3. Damaged ceiling panels require replacement.
4. Re-caulking is required at the noted areas to prevent water damage.

- High temp dishwasher reached adequate sanitizing temperature of 71.C at plate's surface
- Detergent is manually put into the dishwasher by the operator
