Observation (CORRECTED DURING INSPECTION): -Coverage lacking on sweet & sour buckets stored next to the cooking line and 2-door display cooler in kitchen

-Raw meats/chicken/seafood stored above cooked chicken, beef, carrots in Walk-in cooler -REPEAT INFRACTION
Corrective Action(s): -Cover all foods!

-Raw meat/chicken/seafood MUST be stored on the bottom shelves! Place signs in mandarin/cantanese as reminders to ALL staff

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: -Area under stoves have food debris.

-Dry storage area downstairs -some shelves have what appears to be old droppings -no foods found contaminated and last work report from Abell Pest Control shows no activity
Corrective Action(s): Clean and disinfect all these areas regularly

Marked improvement since last routine inspection -maintain.

NOTE: spoke with owner regarding proposed structural changes -floor plans need submittal and approval prior to construction
NOTE: pooled stored egg observed in 2-door display cooler in kitchen -owner insists this is pasteurized egg however the boxes have been thrown out. Operator is to keep an empty box to verify
Reminder: No pooled stored raw egg allowed as per documents provided in the last routine inspection

Temperature Controls:
-2-door display next to Walk-in cooler 2 deg C (beef)
-Walk-in cooler 3 deg C (vegetables)
-2-door display next to washer 3 deg C (vegetable)
-mini-cooler next to stove 4 deg C (meat)
-bar coolers 3 deg C (alcohol)

Chemical Controls:
-Low temperature chlorine sanitizing dishwasher >50ppm as per test strips
-Bleach sanitizer buckets >100ppm as per test strips
Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridges, hot holders and mechanical washer

General Sanitation
NOTE: maintain rice scooper in ice water and dishwash every 4 hours
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests

Professional pest control comes on a regular basis: Abell Pest Control comes in bi-weekly

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
NOTE: bare paper towel rolls must be in a dispenser to prevent ends form being contaminated when handled
