Observation: Corners of three counters and large strip of edging on main counter is missing, worn and has torn away.
Torn edging exposes wood underneath which has darkened over time.
Corrective Action(s): Repair or replace edging of counters so all surfaces are made of easily cleanable material.

Comments

Kitchen was not in operation at the time of inspection.
Operator has plans to do routine cleaning of the kitchen.

Walk in cooler, <4C.
Bleach water sanitizer was not made during the inspection. Bleach is available.
Operator is able to describe how sanitizer is made and used in the kitchen and dining areas.
Large pots available for cooking. Operator describes cook to serve process with little to no leftovers.
Because of the age of children attending camp, staff spoons out to campers from the pot or trays, service is not buffet style.
Some food are past best before dates, inventory will need to be done before operations begin.

Majority of the equipment including pots, pans, large serving dishes are in good repair, stainless steel.
Sinks for dishwashing are in clean condition and good repair.
Dishwasher was not on, not available to be tested during the inspection.
Racks for dishwashing have some calcified residue built up, could be scrubbed down.
Fume hood is clean and in good repair, no excessive grease build up.
Counters have clean surfaces.
Food is kept inside cabinets that close to prevent pest access.
No signs of pest at the time of inspection.
