-Overdue permit fee letter hand delivered. Ensure that it is paid within 10 business days. All coolers were < 4 C. All freezers were < -18 C. Bleach solution was at 100 ppm. No evidence of pests, pest control is coming on site monthly. Hand sinks supplied with hot and cold water, soap and paper towels. Invoices for meat available on site. Discussed the preparation of hot and cold smoked meats. They are checked with a probe thermometer to ensure that they reached 74 C. Nitrates are premixed. General sanitation was satisfactory.
