Observation: Observed quite a bit of food debris accumulating on the floor of the walk-in cooler, below and behind the deep friers/grill, and below dish sinks.
Corrective Action(s): Clean these areas either more often or more thoroughly to ensure these build ups are better managed. Soy and tempera sauces in buckets in walk-in cooler discussed as significant contributor to present condition. Strategize how to make buckets more accessible and area cleanable. Consider changing the method of dispensing/accessing these two food items. Review at next scheduled inspection.

New freezer purchased;
new stainless steel shelves purchased in several areas in kitchen;
Kitchen area generally reorganized and existing shelves and counters cleaned;
New Upright cooler on order to replace old/dirty/rusted one in corner of kitchen;
New dry food storage bins purchased (food grade too);
++All of the above have significantly improved the look in the kitchen. The kitchen is cleaner, brighter and seems more organized. Very good.
Cooling units measured at 4 C or less;
Dishwasher at 76 C at plate;
**Floor condition continues to be a barrier to cleaning. Long-term improvements should consider a floor renovation.
