209 - Food not protected from contamination [s. 12(a)] Observation: Rolling rack with baked goods is located close to ware washing area. Also, space in the back area is limited so it's constantly being moved around. Corrective Action(s): Provide cover for the rolling rack to protect from possible contamination. Hot baked goods are placed in this rack so a mesh/breathable cover is recommended. Violation Score: 3

Hand sinks stocked with liquid soap and paper towels. Hot and cold water available. Sanitizer (quats) measured 200 ppm in buckets. High temp dishwasher reached 75 deg C. Walk-in freezer was at -18 deg C. New line cooler installed - temp. was at 2-3 deg C. Sandwich line cooler was at 4 deg C. Hot holding for eggs, sausages, potato wedges was above 60 deg C. Beverage cooler was below 4 deg (back area); front area was at 6-8 deg C (ensure milk products are placed more in the back). Temperature log now done digitally (on tablet). Staff hygiene - clean uniforms and hairnets. Most staff have Food Safe 1 certification. Pest control monitoring in place. General sanitation was satisfactory. Note: Foot print of this premises is small. Storage is always an issue. Obtain more storage space that is close by (in the same building).
