Observation (CORRECTED DURING INSPECTION): Found meat slicer not in use with food debris still on unit around blade
Corrective Action(s): Must properly wash and sanitize entire meat slicer after use.

Observation: Found food debris building up in hard to reach areas behind and under equipment, and splattered food on walls along the cooking line.
Corrective Action(s): A thorough cleaning is required through out the premises in all hard to reach areas under equipment, shelving units and all walls in food preparation areas.

Observation: Upright cooler beside ice machine was 13 C, difficult to close the door properly.
Corrective Action(s): Have door on cooler repaired, and check to see if cooling coils require cleaning and/or need more freon.
Do not use for potentially hazardous foods until cooler is repaired.

Observation (CORRECTED DURING INSPECTION): Found a quat sanitizer bottle with vinegar and water instead of quat sanitizer
Corrective Action(s): Must label all containers with contents unless item is in its original container.
NOTE: vinegar should not be used as a sanitizer for any food contact surface.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation (CORRECTED DURING INSPECTION): 1. Ceiling in corner by meat slicer has water damage and parts of ceiling are hanging
2. Hole in wall in corner by dishwasher
3. missing tiles noted in behind the mixer.
Corrective Action(s): 1. have ceiling repaired so debris does not fall on to food contact surfaces, equipment or into food
2. Have hole in the wall repaired to prevent the entrance of pests
3. Replace missing tiles to assist in proper cleaning of surfaces.
CORRECT: 2 weeks for ceiling and 3 months for the remaining deficiencies.

- Dishwasher had a final rinse 100 ppm chlorine,
- Glass washer had a final rinse of 12 - 25 ppm Iodine
- Coolers other than the one mentioned, were all 4 C or colder
- Freezers were - 20 C or colder
- no hot holding at time of inspection
- No signs of pest activity noted during inspection
