203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Noted large pot of chicken feet on the ground with lid on top. Internal temperature 74.1C. Staff were instructed to transfer hot foods to smaller containers.
Corrective Action(s): Reviewed proper cooling procedures at time of inspection. Ensure hot foods are cooled from 60C to 20C in less than 2 hrs at room temperature. Use small shallow containers, ice wand, ice bath...etc to facilitate cooling at room temperature. Then transfer foods to cooler unit to cool to 4C in less than 4hrs.

Observation (CORRECTED DURING INSPECTION): A few cloths noted on counters and one hanging on shelving unit. No sanitizer detected in container with cloths submerged in dim sum area. No concerns with sanitizer concentration/locations in the main kitchen food preparation area.
Corrective Action(s): Ensure chlorine sanitizer solution is maintained at 100ppm.

Observation (CORRECTED DURING INSPECTION): Noted frozen chicken in sink with cold water at time of inspection.
Corrective Action(s): Ensure frozen potentially hazardous foods are thawed under cold running water or in cooler unit.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: A) Hot plate noted on site again. Hot plate was under food preparation table across from the cookline. It appeared to have been used as it was warm and oily.
B) Noted more than 50 seats in dining area at time of inspection. Since last compliance meeting premises has not received 3 consecutive low hazard ratings in order to have more seats permitted in dining area.
Corrective Action(s): A) Remove hot plate from premises.
B) Only 50 seats permitted in dining area. Remove all remaining dining seats from the premises. Locking the seats up on site is not acceptable as staff have demonstrated as they take them out of storage during busy hours.

- No obvious signs of pest activity noted at time of inspection. Operator to send copies of pest control reports to the undersigned for review. Last pest control inspection suggested that an extra pest control service is added per month. Operator was instructed to follow all recommendations made by pest control technician.
- Correction Order issued for repeated violations.
