Observation (CORRECTED DURING INSPECTION): 1) Spray sanitizer had no detectable quats chemical. Sanitizer dispenser was not hooked up to concentrated chemical. Ensure that sanitizer levels are tested regularly.
2) Cleaning cloths should be kept in sanitizing solution.
3) Prepared bleach solution was very strong. Use only about 1 tsp of blech per liter of water.

Observation: Rat droppings are still noted in some areas. Clean and sanitize all areas with rat droppings.
Some areas have fruit flies; esp behind bar. Clean and monitor. Treat drains if necessary.

Observation: Rat traps have been placed throughout. Good. Numerous gaps and holes were noted; pest control wants a specialist to seal gaps properly but they can not perform service for a few months. Fill gaps temporarily until your specialist can do a more thorough job. (cover holes or fill them with steel wool, etc)
Cleanliness still needs work. Most rat droppings are gone so more accurate monitoring can be done - good.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Many areas had been cleaned; however more cleaning is needed. Walk in fridge interior is quite dirty, many floors are still dirty, back stairs and underneath back stairs, top of vent hood still has grease accumulations. Several shelves and ledges were partially cleaned, but still have some dirty residue. Clean thoroughly.

Observation: Numerous areas of floor are in poor repair - broken tiles, etc. Repair.
Raw wood surfaces require refinishing in several areas - ie back stairs, platform for bulk ingredients, etc.
Some shelves are quite worn and require refinishing.

Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)] (1) Large amount of blanched fries in a bus pan placed next to grill. Probe thermometer indicates 19 degrees C. No time tracking. Chef indicates that fries were cooked "in the morning;" and inspection time was 4 pm. Fries discarded.
2) A few pounds' worth of lightly cooked bacon were being held in steel inserts on side of grill - internal temperature 39 degrees C. No time tracking. Discarded. )
Comments

Glasswasher has 100 ppm chlorine in rinse. Good.
Fridges are all <4 Celsius.
Closure order maintained.
