302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Sanitizer (quaternary ammonium) concentration was found to be 50 ppm in buckets used to store wiping cloths. Also wiping cloths were stored on food prep tables. Ensure sanitizing solution regularly changed and is maintained at a minimum of 200 ppm to adequately sanitize food contact surfaces. also ensure all wiping cloths stored in sanitizing solution between use to prevent cross contamination of food contact surfaces. Ensure all equipment is of suitable design/material that can be easily cleaned and sanitized. Operator stated they are ordering a stainless steel rack to replace the wooden shelf. All cooling units were 4 C / 40 F or colder Freezer units were -18 C / 0 F or colder Hot holding units were 60 C / 140 F or hotter High temperature dishwasher final rinse was 74 C or hotter internally Sanitizer (quaternary ammonium) was set up in buckets used to store wiping cloths Note: ensure sanitizer (quaternary ammonium) concentration is maintained at a minimum of 200 ppm and all wiping cloths stored in sanitizing solution between use Monitoring records (temperature and sanitation) records were available however were not up to date. Note: operator to ensure monitoring records are kept up to date. Hand sinks were equipped with liquid soap and paper towel Note: some build up of debris and grime along baseboard of floors and behind cooling units. Ensure all areas regularly cleaned to maintain sanitary condition.
