Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (e.g. prepackaged cheese and ham) were stored above 4 degrees C in the walk-in-cooler, which was at 6.8 to 7 degrees C at the time of inspection.
Corrective Action(s): Operator transferred the cold potentially hazardous food into the pizza prep. cooler during the inspection. Ensure cold potentially hazardous food is stored at or below 4 degrees C.

Comments

All three handsinks (in the front service area, kitchen area, and staff washroom) were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Pizza prep. cooler (upper and lower components) were at or below 4 degrees C.
Beverage cooler was at 4 degrees C.
Chest freezer was at or below -18 degrees C.
Hot-held pizza was at or above 60 degrees C.
Second prep. cooler was unplugged and it is used for dry storage only.
100 ppm chlorine sanitizer was available in a labelled spray bottle.
3-compartment sink was supplied with hot and cold running water. Three sink plugs were available.
No signs of recent pest activity were evident at the time of inspection.
Slicer appeared to be in a clean condition.
Operator on shift held valid FOODSAFE level 1 course training (expiration date: August 11, 2023). Ensure to renew your FOODSAFE Level 1 or equivalent course training prior to the expiration date. Refer to www.foodsafe.ca for information on the FOODSAFE level 1 refresher course.
Permit to operate was posted.
