Observation: Exposed wood shelving underneath the cappuccino mixer machine is falling apart, supported by two containers of syrup.
Corrective Action(s): Securely fasten the wood shelving. Ensure that the material is changed or a shelf liner is placed over the wood so that it is easily cleanable and impervious to moisture.

Comments

Routine inspection conducted. Premise generally well maintained and operated. The following was observed:

1. Temperatures
- Walk-in cooler at 2C
- Walk-in freezer at -17C
- Ice cappuccino and cream machine dispensers at 4C and 1C, respectively
- Sandwich prep cooler at 2C
- Back bar cooler at 1C
- Undercounter coolers at 1C
- Hot-held food products all at 60C or greater
- Temperature logs maintained and up-to-date, updated every 2 hours

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, single-use paper towels
- Quaternary ammonium compound (QUATS) sanitizer at approximately 200 ppm in sanitizing pails and inside sanitizing cup (for the drink mixers), and were switched at time of inspection as part of corporate sanitation plan (switched out every 2 hours)
- Premise generally in very good sanitary condition
- 3-compartment sink was in use at time of inspection. Washing compartment was at 45C and sanitizing compartment at 25C - excellent!

3. Storage
- Food products kept off the floor
- All items are covered when not in use
- Vegetables are pre-washed, with the exception of tomatoes which are placed in a chlorinated vegi-rinse
- Chemicals stored separately from food products

4. Pest Control
- No recent or visible signs of pest activity at time of inspection
- Mechanical traps opened did not contain any rodents. One mechanical trap near the back door did not have an adhesive - you may wish to bring this to the attention of the professional pest control company
- Please send most recent pest control report to the Environmental Health Officer

5. Administrative
- Permit posted
- Supervisor has FoodSafe 1
