Observation: (1) Boxes of food supply observed stored on bare floor in the Walkin freezer
(2) Grains noted on kitchen floor along cooking line.
To Be Corrected By: 2020/08/07
Corrective Action(s): (1) All food items must be stored at least 6 inches off the floor. This is to enable proper cleaning of all floors to prevent pest attraction and harborage.
(2) Grains on kitechen floor must be cleaned properly to prevent attraction of pest.

Comments

This inspection done by EHO student.

The following temperatures were measured:-
- Under Counter Cooler (back prep area) 4.0 deg.C
- Prep Cooler (cooking line) 3.0 deg.C
- Stainless Steel upright freezer -19.0 deg.C
- Under Counter freezer (cooking line) -18.0 deg.C
- Under Counter Cooler (cooking line) 5.9 deg.C --> it was close to lunch time. Cooler opened more frequently.
- Walkin Cooler 4 deg.C
- Walkin freezer -18.0 deg.C

* All handsink in premise were stocked with liquid soap, paper towel, hot/cold running water.
* Low temperature dishwasher had residual Chlorine at plate surface 100ppm
* Glasswasher had a residual iodine sanitizer concentration of 12.5ppm.
* QUATS Sanitizer in buckets for in-use wiping cloths had concentration of 200ppm.
* Staff hygiene practices Satisfactory at the time of visit. Good number of handwashing by kitchen staff observed.
* Food storages practices were good except for the observations listed above.
* Ice machine maintained in a sanitary manner with scoop stored outside machine.
* General Sanitation is Satisfactory
* No Signs of pest activity noted at the time of visit.

COVID-19 SAFETY PLAN.
- Covid-19 Safety plan is available on-site.
- Customers are screened prior to entrance into premise.
- Plexiglass shield noted at Customer Service check point
- Alcohol based hand Sanitizer available for Customers
- Social distancing floor marking noted at entrance.
- High touch Surfaces disinfected hourly using peroxide. Operator has test strips and fact sheet available on-site.
