Observation: Mice droppings observed on the dry storage under counter shelving across from the 3-compartment sink.
Corrective Action(s): Remove all the bins and thoroughly clean the area. Repaint the shelving with a LIGHT paint color (e.g. white). Contract out a pest control company. Operator did not have the pest control reports on-site. Email me a copy of the last 2 reports.

Observation: The back door doesn't fully close unless it's pulled closed.
Corrective Action(s): Remove the air curtains at the back door and install a screen door on the inside. Ensure that the screen door is tight-fitting and doesn't have any gaps around or under it that can allow mice entry into the restaurant.

On Follow-Up:
-Walkin cooler is at 6 degC. Operator is cooling trays of pasta in the cooler that he put in 15-20 minutes before site visit. There is a thermometer in the walkin cooler now. Keep monitoring the temperature and make sure it drops to below 4 degC. The defrost cycle has been changed to 10pm and 2am, as per operator.
-200ppm Bleach solution provided in spray bottles at the 3 stations
-There is cold running water in the staff washroom and at the 2nd tap of the 3-compartment sink.
