Observation (CORRECTED DURING INSPECTION): Wiping cloths noted on counter with 0 ppm chlorine.
Sanitizer bucket noted with 200 ppm chlorine in 3 comp sink
Cloths are sanitized at the end of day.
Corrective Action(s): Ensure wiping cloths are maintained at 100-200 ppm chlorine at all times, either in sanitizer bucket or if stored on counter. Cloths should be dipped in sanitizer every half hour or earlier when they become dirty.
****Wiping cloths must be used to sanitize surfaces every 4 hours or earlier to ensure surfaces are sanitized properly. End of day is not acceptable.****

Corrective Action(s): Ensure paper towel dispenser is functioning properly and allows staff to dry hands with paper towels. Repair/replace/ refill paper towel dispenser.

- Upright cooler was 4 C
- Under counter cooler was 2 C
- Ice cream freezer not in service
*Repair or remove or replace unit.
- Black deep freeze used to hold ice cream during inspection was - 18 C
- Hand sink had liquid soap and hot and cold water (*violation noted above)
- 3 Compartment sink had 200 ppm chlorine
- Sanitizer bucket noted in sink at 200 ppm chlorine (*violation noted above)
- Dipper available but not turned out during inspection.
- No signs of pest activity noted during inspection
- General sanitation is satisfactory
