Observation: Numerous mouse droppings found on either side of large bay door as well as along wall with metal shelves used for storing boxes of packaging. Bottom shelf of the storage units is 1-2" up off the ground making it very difficult to clean under on a regular basis which can act as harborage for pests (in addition to allowing a build up of food).
Corrective Action(s): 1) Clean up all mouse droppings in above noted areas (around bay doors: today, behind shelving April 23, 2024)
2) Adjust shelving so that the bottom shelf is 6" (15cm) up off the ground to allow for easy cleaning. Due: April 23, 2024

General observations:
√ Walk in cooler ≤4°C, walk in freezer ≤ -18°C
√ Food up off floor ≥6” or up on pallets, good stock rotation noted
- Reminder to keep containers of products (such as cut tortillas for making chips) are covered at all times, especially when stored next to hand washing station.
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Bleach sanitizer available at 100ppm present in spray bottles
√ Three compartment sink stocked with dish soap, sanitizer, hot and cold running water
√ Equipment appeared to be in good working order
- Bay door was open at time of inspection. Keep this closed as often as possible to prevent pest entry. Strongly recommend having a removable screen put in for use during the warmer months.
√ General sanitation and maintenance is good

√ No concerns with staff hygiene or food handling noted during inspection
