Observation: One of the taps on the main kitchen hand sink is not working again. This infraction has been coded during the last 2 routine inspections as well.
Corrective Action(s): Temporary fixes are not working. REPLACE THE WHOLE SINK OR ELSE A VIOLATION TICKET WILL BE ISSUED.

Observation: Raw meats were being stored above cooked foods in the glass display cooler. Foods in the coolers were not covered.
Corrective Action(s): Store raw meats BELOW cooked foods. Cover all foods in the coolers.

Observation: A thorough cleaning is required. Sanitation is very poor.
Corrective Action(s): Clean the baffles on the exhaust hood as they have a lot of grease build up; clean the floor under the cooking equipment; clean the bins/lids in the dry storage room; clean under the sinks; clean the glass display cooler including the doors, jambs, shelves; clean under the wok area outside the walk-in cooler.

Observation: Two of the three ceiling light bulbs have burnt out in the dry storage room and visibility is poor.

Freezers are below -18 degC
Rice is being hotheld above 60 degC
Dishwasher rinse had 50ppm chlorine
Most of the wiping cloths were stored in a 200ppm bleach solution.
Bar hand sink and washrooms were fully equipped.
Exhaust hood had been serviced. Next service is due in January.
Orkin pest control is on contract. Service reports from November reviewed. Follow the technician's recommendations as discussed.
