Observation (CORRECTED DURING INSPECTION): Observation 1 - Ice machine had small amount of pink algae/mould inside. This can contaminate ice.
Observation 2 - Utensil drawers in line cook area were dirty inside and some visible debris was stuck on to utensils
Corrective Action(s): Correction 1 - Ensure that all foods are protected from contamination - use clips, lids, saran wrap
Correction 2 - Employee removed trays inserts and washed and sanitzed them

Observation (CORRECTED DURING INSPECTION): Quats sanitizer spray bottle in line cook area had quats concentration below 200ppm. 200ppm is required to achieve effective sanitation after washing and rinsing
Corrective Action(s): Operator emptied the bottle and refilled with fresh sanitizer of correct concentration

Observation: Observation: Unsealed/uncovered foods in dry storage and coolers/freezers. These foods are not protected from contamination (e.g. fallen debris, pests)
Corrective Action(s): Ensure that all foods are protected from contamination - use clips, lids, saran wrap etc.

Observation: Observation 1 - Dirty floors where floors meet wall interface. A lot of dirt and debris underneath all counters and equipment (Kitchen and in storage rooms underneath shelving as well as walk in coolers/freezers too)
Observation 2 - Shelving racks in dry storage room were sticky and visibly dirty. These can contaminate food items.
As well: shelving underside in prep areas were dirty
Corrective Action(s): Correction 1 - Clean the floors everywhere

Please contact manufacturer of QuanTarium meat slicer to determine why the black material is peeling and what can be done to fix it, contact Health Department after.
High temp dishwasher reached 71.0C at the plate level upon final rinse cycle
Chlorine glasswasher had 50ppm chlorine
No signs of pests at time of inspection. Aim to keep back door closed as much as possible.
Handsinks had liquid soap. Paper towel and hot/cold water
Coolers were 4C or less
Freezer temperatures were in place
Foodsafe certified staff present
