Observation (CORRECTED DURING INSPECTION): Noted container of portioned soft noodles out at room temperature approx 8C to 10C. Returned to cooler unit. Premises did not appear busy and staff were not doing any food preparation in the back kitchen at time of inspection.
Corrective Action(s): Soft noodles have high water activity and are not self stable like dry noodles therefore they need to be refrigerated at 4C or less at all times.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer available in the back food preparation area. This issue was noted on the previous report. Staff are aware of what sanitizer solution is and needed for but admitted they were busy and forgot. 100ppm chlorine sanitizer solution with cloths submerged was available in the front drink making area.
Corrective Action(s): Ensure sanitizer solution is readily available in all food preparation areas.

Observation: Overall general sanitation satisfactory but more attention is needed on cleaning the dry storage racks area. Debris noted under and behind dry storage racks.
Corrective Action(s): Do a thorough cleaning in the dry storage area. Ensure all racks and freezers are fully pulled out and all debris is cleaned up.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Noted front of house staff member cutting up cooked chicken in the cash register area. This is not an approved food preparation area as there is no hand sink.
Corrective Action(s): Ensure food preparation/handling takes place in designated food handling areas where a hand sink is located.

Comments

Kitchen staff were on break at time of inspection. Only front of house staff was available until other staff were called and arrived part way through the inspection.
Hand wash stations had soap, paper towel, hot and cold running water
All coolers 4C or less (upright two door, sliding door display case, undercounter, pop cooler...etc)
Bean sprouts were stored in the cooler unit at 4C
Freezers x 4 all less than -18C
All hot holding higher than 60C (rice, miso soup...etc)
No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered..etc)
Broken floor tiles in front of dishwasher have been replaced
Staff on duty have up to date foodsafe training.
