Observation (CORRECTED DURING INSPECTION): Chopped vegetables (tomatoes, cucumbers, onions, etc too warm at 10C -20C
Corrective Action(s): Make sure chopped vegetables are cooled rapidly by placing in shallow pans, covering loosely, and placing in the coldest part of the cooler. If the kitchen staff must leave the task for any reason completed work (all chopped vegetables) must be placed in the cooler until the employee returns. DO NOT leave chopped vegetables at room temperature, and make sure that only small quantities of whole vegetables are prepared at a time.

Observation (CORRECTED DURING INSPECTION): Tin foil and cardboard being used as shelving paper in the dry storage area.
Access to outside storage area not available as key was off site

Mouldy drain pipe for beer-tap spill-drain.
Make sure the sides of ice machine lid are cleaned as well
Corrective Action(s): Make sure sanitizer solution is changed more frequently and that the concentration of sanitizer is maintained at 100 ppm in all buckets (only one of four sanitizer buckets was actually at 100 ppm).
Monitor cleaning of premises and make sure that garbage pick-up is frequent enough to ensure that all garbage can be placed in the bin and the lid closed.
