Observation (CORRECTED DURING INSPECTION): Cooked chicken stored in the undercounter cooler at 53-55C. Operator said he prepared extra chicken for the lunch rush.
Corrective Action(s): Obtain an additional hot holding unit to store hot potentially hazardous food or cook to order. Do not store hot food in the cooler as this cannot cool down food and can elevate cooler temperature.

Observation (CORRECTED DURING INSPECTION): Operator informed that 10ppm bleach is required for sanitizing when inquiring manual warewashing procedure.

Corrective Action(s): Please remove droppings and monitor for pest activity. Forward pest control report from last 3 months to date. Remove any unused equipment behind chest freezer.
