Observation: No chlorine sanitizer detected during final rinse cycle of the diswasher.
Corrective Action(s): Repair or adjust the dishwasher so that at least 50 ppm chlorine sanitizer is available at the dish surface during final rinse. (Immediately). In the interim, all dishes must be sanitized manually by soaking in 200 ppm chlorine bleach solution (1 oz bleach per gallon of water)

Comments

*Ensure mixing bowl used for storing batter is cleaned and sanitized every day.
* Do not re-use empty plastic bottles of ketchup and mustard etc. All used bottles stored on top shelf above the grill must be discarded.
* Defrost the dairy cooler.
* Clean floor especially near the grill.
* No records are kept for dishwasher chlorine levels. Ensure to test the chlorine sanitizer at least once a day and record on log sheet.
Walk-in cooler at 3.2 degrees C.
Upright freezers at -18 C or colder.
Upright cooler across from the deep fryers at 3.5 degrees C.
Bleach sanitizer available for use.
Liquid soap and paper available at the hand sink.
Ice cream freezer below -18 C.
