306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Several (many) areas of kitchen observed dirty with accumulations of food and other debris. These include:
A) Floor and back end of walk-in cooler;
B) floor under double sinks;
C) Behind freezers in front hallway;
D) shelves throughout kitchen;
**Some hard surface counters and shelves covered with cardboard and tin foil. Cardboard is not easily cleanable and not made of a suitable material.
**Tin foil must be in good condition and cleaned or replaced daily. Monitor.
Corrective Action(s): Kitchen needs a big clean up, including the movement of shelves, coolers and freezers to br properly cleaned. Focus on above noted areas.
Re-inspection in two weeks for status of improvements.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: A) Many shelves covered with duct tape or similar and are no longer in a condition that is easily cleanable. Plan to replace deteriorated shelves above prep sink, and the two used at the deep frier station as discussed.
B) Liquid soap dispenser at sushi bar leaking onto floor. The floor is a mess here.
**Any shelving or hard surface covered with duct tape should be removed. A plan is needed to replace all these surfaces with those that are deteriorated and covered with any foreign substance i.e. duct tape foil, cardboard, plastic film etc.
Corrective Action(s): Discard old and deteriorated shelves as discussed.
Develop a plan to replace old counters and shelves.
This will be reviewed again at next scheduled inspection (not at re-inspection date).

Comments

Bar fridge significantly frosted. Defrost and clean out to prevent defrosted water from leaking onto the floor in this area.
**Many old and unused items, containers, equipment etc. causing overcrowding of the limited shelving and floor space in facility. This is resulting in marginal cleaning practices. Please thin out and remove to allow better overall maintenance of facility.
Dishwasher at 79 C at plate.
cooling units less than 4 C.
freezers below -18 C.
Sanitizer in buckets 200 + ppm.

Issues here are organization and cleaning.
