Observation (CORRECTED DURING INSPECTION): Lid of sandwich prep table was opened for a period of time prior to inspection, leading to elevated temperatures: ground beef at approximately 10C. Ground beef was removed from storage stand-up cooler approximately 1.5 hours ago.
Corrective Action(s): Lid was closed immedately and ground beef was placed in the cooler where it can cool back down to 4C. DO NOT keep the lid open! This can lead to loss of cool air, causing food products to rapidly heat up.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Sanitizer spray bottle had >>> 200 ppm chlorine residual.
2. Meat slicer is in unsanitary condition, with vegetable debris throughout.
3. Top of dough mixer contains dry flour residues.
Corrective Action(s): 1. Sanitizer spray bottle was refilled with 200 ppm chlorine residual. Ensure that you maintain this concentration for proper sanitizing. Concentraitons above 200 ppm may result in chemical contamination of food.
2. Meat slicer disassembled and washed, rinsed, sanitized at time of inspection. This must be done after EACH use to prevent growth of bacteria / contamination of other food products.
3. Dough mixer wiped and sanitized at time of inspection.

More attention needs to be made to proper sanitizing of food contact surfaces!

Comments

Routine inspection conducted. Facility is generally in satisfactory sanitary condition. The following was noted:

1. Temperatures (Max: 4C for coolers, -18C for freezers)
- Sandwich prep cooler at 1C
- Walk-in cooler at 3C
- Beverage cooler at 3C
- All chest freezers and stand-up freezers at -18C or below

2. Hygiene and Sanitizing
- Handwash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach bottle available on-site, employee taught how to properly manually warewash using the two-compartment sink
- Can opener and knives, utensils, trays are generally in good sanitary condition
- Restrooms at back stocked with handsinks with hot/cold running water, liquid soap, and single-use paper towels AND hand dryers

3. Storage
- All food products are covered in food bins with tight-fitting lids
- Chemicals stored separately from food items
- Flour bags and onions are neatly stacked off the floor - good

4. Administrative
- Permit posted

5. Pests
- No signs of recent pest activity at time of inspection
