Observation (CORRECTED DURING INSPECTION): Can opener blade observed to have built-up of food debris.
Corrective Action(s): Clean and sanitize the aformentioned item. Can opener blade must be cleaned and sanitized after each use. If operation is busy, place can opener in dishpit until it is able to be cleaned and sanitized.

Comments

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs dispenser and QUATs spray bottles at 200ppm. 2-compartment sink available. High-temperature dishwasher measured at 77.1C final rinse temperature.
Prep cooler, stand-up cooler, walk-in cooler measured at 4C or lower. Walk-in freezer measured at -18C. Hot-holding unit measured at 65.2C. Temperature logs are well maintained.
No signs of pests observed.
Ice machine in sanitary condition. Ice scoop observed to be stored outside ice machine.
Meat slicer observed to be in sanitary condition.

NOTE: Ensure equipment in the dry storage area is raised off the floor and that at least one kitchen staff on-site must have valid FOODSAFE Level 1 certification.

Overall, facility is well organized.
