Comments

General sanitation is good. Handwashing station supplied with hot/cold running water, soap, and paper towels. Coolers (walk in, prep line, upright beverage) at < or = to 4 C. Chest freezer at -18 C. All cold units are equipped with working thermometers. Hot holding units (the counter top & storage) > 60 C. Three compartment sink available for manual dishwashing. Sanitizer available at 200 ppm Quat solution with drain plug to fill the sanitizing compartment of the sink. Dry storage area - organized/satisfactory. No signs of pest activity at the time of the inspection. Recommendation: - Seal hole on the wall near the heating tank (a mechanical room near the staff washroom ) and replace missing floor wall junctions.
