Observation (CORRECTED DURING INSPECTION): undercounter drawer cooler with inserts not in good working order (See Code#308); top inserts with pickles, cut vegetables measured to be at 12-15 C. Drawers had fried tempura and other vegetables that were at 12-15 C. Operator advised that these items go through quick rotations (less than 1 hour) and the tempura was put in there within 20 minutes.
Corrective Action(s): Required operator to remove all perishable items from the insert cooler and move them to a working walk-in cooler. All cold potentially hazardous foods that were in there for more than 2 hours must be discarded.

Observation: Observed slight pink mould/mildew build up in the ice machine

Observation: Observed food and grease debris build up throughout the facility; especially behind the grills where grease had pooled a bit. This is a huge pest attraction and a serious fire hazard
Corrective Action(s): Required operator to perform thorough cleaning throughout the facility.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Observed two undercounter drawer coolers to be at 12-15 C (#1 and #3, where #1 is at the entrace of the kitchen). Operator advised that one of them broke down and was repaired a few days ago. Both coolers were dialed up to max (coldest setting)
Corrective Action(s): Required operator to remove all perishable items from the cooler and move them to a working cooler ONLY IF the food was put in there within 2 hours. Operator is to call for repairs on these two coolers immediately. Operator advised that repair call was made and technician will be coming to fix the coolers on the days of the inspection.
