Observation (CORRECTED DURING INSPECTION): Some of the sauces in the warmer were around 55 degC. This indicates that the sauces aren't reheated prior to being placed in the warmer. Warmer's are not intended to be used as stoves. They keep hot foods but are not meant to reheat the foods.
Corrective Action(s): Reheat foods prior to placing them in the hot holding units.

Observation: A few mice droppings observed on the undercounter shelf and around the heater in the kitchen. Orkin is on a monthly contract. Service reports are on-site.

-Since the 3-compartment sink is right across the hand sink, you may remove the soap and paper towel dispenser at the 3-compartment sink.
-All coolers are below 4 degC
-No freezers on-site.
-Rice is at 68 degC; Quinoa is at 83 degC.
-Hand sinks and washroom sinks are fully equipped
-200ppm Quats is available for sanitizing in buckets at all the work stations
-Temperature log is being maintained
