-There are 3 coolers on-site and all are below 4 degC -Freezers are below -18 degC. -No hotholding was being done at the time of the inspection. -Hand sink is fully equipped. -Dishwasher rinse had 50ppm chlorine in the rinse cycle. PURCHASE CHLORINE STRIPS TO MONITOR YOUR SANITIZING CYCLE. -200ppm bleach solution is available in spray bottles on-site. -Reminder: no grease laden vapors permitted in this kitchen due to a lack of ventilation. So no grilling, frying, etc. -Premise has been renovated. A commercial dishwasher has been added. Operator can now serve food in reusable dishes. Operating permit to be revised to include this change.
