Corrective Action(s): Prepare fresh bleach sanitizer at 100-200 ppm. Ensure this is always available during food prep.

2. Staff belongings stored on top of bag of onions.
3. Container of marinated raw meat stored on the top most shelf above ready to eat foods in double door stand-up cooler.
Corrective Action(s): 1. Store cutting boards away from hand washing station to avoid potential contamination.
2. Store staff belongings away from food and equipment for the business.
3. Store raw meat on bottom most shelf or away from ready to eat foods.

Observation: Rodent droppings observed throughout the perimeter of the kitchen. Higher numbers observed in the dry storage room. Pest control company provides monthly service.
Corrective Action(s): Clean all droppings and sanitize affected surfaces with bleach sanitizer. Correct by: 1 week

Observation: Accumulation of food debris observed in the following areas:
- High touch surfaces (ie. handles, knobs, etc)
- Outside and inside of coolers
- Surfaces between and underneath equipment at the cooking line
- On top of bulk ingredient bins
In addition, old greasy newspaper was used to line shelving.
Corrective Action(s): Clean all noted areas. Remove all old grease newspaper. Correct by: 1 week
