Observation: A small number of droppings was observed in the storage room and more droppings were observed in the back hallway.

Hot holding was > 60 C.
Bleach sanitizer solution was measured at 100 ppm.
The low temperature dishwasher had 100 ppm chlorine. Check daily.
General sanitation was satisfactory.
