Observation (CORRECTED DURING INSPECTION): Hotdogs observed on cooktop for hot holding below 60 C. Noted at 35 C. This was noted as the standard operating procedures for these products. No temperature checks performed.
Corrective Action(s): Staff must be properly trained to ensure food is maintained and served in safe manner. Hot dogs discarded. Temperature checks must be performed as routine compnent of operations.
Review written food safety plan with management at follow up inspection date.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwashing not performed as per accepted practices. Observed "cleaned" dishes in drying rack in second sink. It is not possible to properly wash rinse sanitize and iar dry dishware using one sink. This despite dishwashing sign displayed on wall.
NOTE: Dish sinks also used as handwash station.
Corrective Action(s): Proper space and facilities must be provided to allow proper four step dishwashing to occur. Add proper drying rack space to this area. Keep this space free and able to provide dishwashing. Re-locate handwashing facilities to alternate area in kiosk.
Review with management at follow up inspection date noted on report.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Two fly sticky traps in Kiosk, one directly above Hot dog cooktop. Four hot dogs on cooktop at risk of direct contamination from sticky trap.
Corrective Action(s): Do not place sticky traps in areas of kiosk that can contaminate food. Hot dogs discarded.

304 - Premises not free of pests [s. 26(a)]
Observation: Fly problem exists in kiosk. Sticky traps placed at front, including directly over cookline. Flies also noted in the back area.
Corrective Action(s): Contact Pest control for advice, but action must be taken to keep flies out of kiosk and away from food. Discuss at follow up inspecction date noted on report.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Staff working in kiosk does not have foodsafe training, and doesn't understand basic foodsafety concepts.
Corrective Action(s): Get training for all staff working alone in kiosk. Review process with management at follow up inspection dated noted on report.

Comments

In general there is insufficient space in this kiosk to safely prep and store food. Hand washing and dishwashing are mixing more now that concession is not operational and there is no proper oversight of food activities. Shelves have been requested multiple times but the same storage issues continue, making sanitation and safe handling of food or food related utensils unsafe.
There is no designated handwash station and the existing double sink is not properly utilized.
**Time to add a handwash station, better organize the kiosk and promote safe food handling with a review of standardized practices in the kiosk.
Sanitizer is tucked away and not being used.
