Observation (CORRECTED DURING INSPECTION): Wiping cloths were sitting on counter tops and on the hand wash station.
Corrective Action(s): Provide sanitizer bucket with 100 ppm bleac and store all wiping cloths in this solution.

Observation (CORRECTED DURING INSPECTION): Some raw meat products were stored on the same shelf as cooked chicken. Light covers missing in the dry storage area.
Corrective Action(s): Store raw meat products underneath cooked and ready to eat food items. Provide light covers in the dry storage area.

Observation (CORRECTED DURING INSPECTION): Walk-in freezer was at -10 to -11 deg C.
Corrective Action(s): Ensure this frozen foods are maintained at -18 deg C or colder.

Observation: Kitchen area ceiling tiles and light covers have debris build up as well as underneath equipment.
Corrective Action(s): Clean light covers and ceiling tiles above cooking area to remove debris. Pull out equipment so that thorough cleaning can be done underneath and behind.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Renovations still required in the kitchen area - from ceiling tiles down to the flooring. Old and worn out equipment to be replaced.
Corrective Action(s): Renovations have started in the dining area. Washrooms have recently just been renovated and currently, flooring in the dining area is being replaced (one section at a time - east side first then the west side). Kitchen area will be done once roof and ceiling have been replaced by land lord.

Permit posted in conspicuous location.
Hand wash stations provided with liquid soap and paper towels.
Bleach sanitizer measured 100 ppm or greater.
Prep line coolers were at 6-9 deg C (checked during busy lunch rush).
Prep line freezers were at -5 to -10 deg C.
New upright cooler was at 4-5 deg C.
Walk-in cooler was at 3-4 deg C.
Hot-holding for mash potatoes, gravy, and soups was above 60 deg C.
Low temp. dishwasher had 100 ppm chlorine residual.
Temperature was available but incomplete. Include the hot holding and dishwasher in the daily log.
Record temperature of coolers and hot holding equipment at least 2x a day (AM & PM).
Pest control monitoring in place.
Staff on duty have Food Safe 1 training.

Increase lighting in the east side of the kitchen area by replacing burnt out fluorescent light bulbs.
