Observation: Row of cabinets under the main breakfast area: Inside, lower level of the cabinets has deteriorated. All 4 bottom levels have caved in. The first one to the left shows deterioration to the point of exposure of rough plywood debris on the side and the back, potential for mould as well. The supporting side wall of the cabinet shows the worst deterioration. Oils for waffles and pancake sirup are stored inside cabinets.
There are 2 ant traps inside this first cabinet.
Corrective Action(s): Remove the sirup and oils to another cabinet.
Repair the base level of all the cabinets to ensure they are durable, cleanable, smooth material.

Hand sink in breakfast prep room is supplied with hot and cold running water, liquid soap and paper towel in dispensers.
Quat sanitizer >200ppm.
Bleach sanitizer is too high, bleaching out the test strip. Please dilute to 100ppm or use your Quat sanitizer.
Note that bleach and Quat sanitizers should not be used at the same time, on the same surface.
Sinks at the back laundry room - use clean in place procedures for trays for buffet and chafing dishes as these do not fit inside any of the residential sinks at the front or back.
Hot holding sausages and eggs, 60C.
Display milk cooler <4C.
Freezers <-18C.
Other fridges <4C.
Staff and customer food items are separated.
No signs of pests at the time of inspection.
