Observation: 1) Raw fish was stored above ready to eat food product in the walk-in cooler
2) Bowl without handles were used as a scoop inside dry storage
3) Fried flour ingredient stored in a stainless steel bowl was placed directly on the floor near the cookline
Corrective Action(s): 1) The walk-in cooler is to be reorganized such that raw food product was stored on the bottom shelves, below ready to eat food product
Correction date: Immediately

The following observations were corrected during the inspection
2) Bowls without handles were removed from dry food products and scoops with handles are used
3) Stainless steel bowl containing the fried flour ingredient was moved to a shelf at least 6 inches above the ground

Observation: Ventilation grates (metal) above the cookline had oil and grease build-up. This presents a fire hazard and contamination point.
Corrective Action(s): Ensure that the ventilation grates are adequately cleaned such that the build up oil and grease is removed.
Increase the frequency of cleaning ventilation grates.

- High temperature dishwasher available for mechanical ware washing, temperature registered at 74 deg C on plate surface during final rinse cycle
- 2 compartment sink available near the mechanical dishwasher
- Food contact sanitizer registered at 200 ppm chlorine
- No signs of obvious pest activity
- Back door was closed at the time of inspection, no gaps noted around the door
- Overall sanitation is adequate
- Ice machine is maintained in a sanitary manner, scoop is stored outside
