Observation (CORRECTED DURING INSPECTION): - Some potentially hazardous foods were remaining in walk-in cooler and were above 4C for greater than 2 hours (based on information provided by staff and Operator).
- Internal temperatures measured:
- shredded cheese (6 bags) 16C
- sliced cheese (1 box and 1 package) 17.2C
- cooked rice (1 package) 16.9C
Corrective Action(s): - Discard potentially hazardous foods which have been above 4C for 2 hours or longer.
- The above items were discarded by staff at the time of the inspection.

Observation: - Temperature inside of walk-in cooler was 16C.
Corrective Action(s): - Repair walk-in cooler so that it is capable of maintaining a temperature of 4C or colder. Do not store any potentially hazardous foods in walk-in cooler until the temperature is at 4C or colder. This is a critical piece of equipment which must be repaired immediately. Submit service report to EHO confirming repair. To be corrected by: 06-Nov-2023

Note: Operator reported issue with walk-in cooler was identified earlier in the day during temperature monitoring and action was taken by removing potentially hazardous foods (Exceptions noted in code 205 and addressed by staff at time of the isnpection) and repair technician was contacted. Technician was on-site earlier to assess needed repair and is returning with a part today. Limited potentially hazardous food present on-site - kept in line coolers and walk-in freezer. No additional stock of potentially hazardous foods to be delivered until walk-in cooler is in good working order.

- Three compartment warewashing sink was set up for manual dishwashing. 200ppm quats solution present in compartment for sanitizing step
- In use wiping cloth kept in sanitizer solution - 200ppm quats
- Staff on duty has Foodsafe level 1 certificate
