Observation: High temperature dishwasher achieved 54.9'C at the plate level after final rinse. Temperature gauges broken. Facility is not equipped to conduct manual dishwashing. Closure Order issued at this time.
Corrective Action(s): Ensure the dishwasher is repaired. Contact the health inspector once repaired, prior to re-opening.

Observation: Few droppings observed from the following areas in the back storage room.
1) floor by the wall underneath stairs
2) left corner by the stand up freezers
3) right corner by the chest freezer
Corrective Action(s): Ensure to monitor and remove droppings on a daily basis. Sanitize the affected areas using 1000ppm chlorine (20ml bleach per 980ml water). Fill hole in the corner by the chest freezer. If worsens, professional pest control company must be contacted for a full inspection.

Observation: Accumulation of grease build-up observed from floors underneath/sides of grill/deep fryer.
Corrective Action(s): Ensure these areas are scrubbed/cleaned on a more regular basis.

Routine inspection conducted:
-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement; Hot-holding temperature within requirement.
-200ppm chlorine available in a bucket to hold wiping cloths and in spray bottle.
-Ventilation canopy hood serviced and maintained.
-General food storage practice satisfactory.
-Back storage room satisfactory.
NOTE: Turkey legs being cooled in the back storage room. All still >60'C at this time.

Closure Order issued to and signed by the owner at this time. Facility must remain closed until the approval to re-open is granted by the health inspector.
