Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in spray bottle for use at front service area concentration well over 200ppm. No bleach sanitizer solution prepared and available for use in the kitchen.
Corrective Action(s): Ensure a 100ppm bleach sanitizer solution is available for use in the front service area and in the kitchen. General sanitizer solutuion formula: 1oz of regular unscented bleach to 1 gallon of water.

Observation (CORRECTED DURING INSPECTION): At the time of inspection kitchen hand sink not provided with paper towels. Front service area 2 compartment sink not provided with liquid soap and paper towels.
Corrective Action(s): Ensure all hand sinks are provided with liquid soap and paper towels. In the interim, paper towels placed on shelf next to kitchen hand sink and on shelf above the 2 compartment sink.

- Uncovered containers of food observed in the walk in cooler. Food containers observed stored directly on the floor in the walk in cooler.
- Various scoop and other types of dispensing utensils observed stored directly in dry product.
Corrective Action(s): Ensure all food is protected from contamination at all times. Cover food containers with tight fitting lids. Store all food at least 6 inches off of the floor. Store all scoops and other types of dispensing utensils outside of dry product. Correct immediately.

- At the time of inspection kitchen hand sink not provided with paper towels. Front service area 2 compartments sink not provided with liquid soap and paper towels.
- 3 compartment sink in the dishwashing area serviced with 2 taps. 3 out of the 4 taps do not work. No water supplied.
- Walk in freezer in the storage area ambient air temperature ~ -6 degrees C.
Corrective Action(s):
- Install a paper towel holder for the kitchen hand sink. For the front service area 2 compartment sink place paper towels in a holder or dispenser.
- As per manager renovation is in the final stages and that water supply lines will be installed for the 3 compartment sink in the dishwashing area.
- Service the walk in freezer and ensure unit is capable of maintaining -18 degrees C or less.

Dishwasher registers 50ppm chlorine during the final rinse cycle.
Walk in cooler at 4 degrees C.
Preparation cooler inserts and lower section at or below 4 degrees C.
2 door freezer at -17 degrees C.
Beverage cooler in front area at 4 degrees C.
Display cooler at or below 4 degrees C.
