Observation: Cooked pork slabs stored in outdoor chest freezer unprotected (bulk food style)

Numerous dry storage bulk bags contaminated by rodents -chilli powder, curry powders
Correction: Discarded the pork slabs (12 pieces) -protect your foods from contamination leave in a clean container

Operator is to go through ALL foods in the dry storage areas (near the back stairs) to check for rodent contamination and discard.
Place all lightly packaged foods (ie. soft plastic, paper, nylon) in rodent proof containers
Keep all foods off the floor on the shelves

Dry storage room has been reorganized and cleaned: -soft packaged foods stored in rodent proof containers, foods off the ground,
NOTE: operator to place additional lighting and multi-shelf racks in the dry storage area
Light bulb replaced in back stairs
Cleaning under the cooking line, front exhaust vents cleaned, bar area cleaned
Knife magnetic strip for knives/cleavers placed next to preparation cooler

NOTE: do not store the dishwash racks on the ground -store the clean racks on the upper shelves above the washer

A-Plus Pest Control report provided -no pest activity noted, pest entry points observed and blocked. Inspections will increase on a bi-weekly basis -okay

Operator to monitor EVERY MORNING before opening checking for new pest activity: droppings
