Comments

Kitchen:
Kitchen has been well reorganized.
Storage shelves for clean utensils/dishes installed near the dishwasher.
Some broken equipment removed from the kitchen.

General sanitation - good.
Fan hood - clean.
All handwashing stations - supplied with liquid soap and paper towel; hot and cold running water.
Chest freezers at -18 C.
Domestic cooler: cooler at 4.0 C; freezer at -18 C.
Bleach sanitizer - available.
Walk-in freezer is not in use/A dray storage area/ - well organized and clean; all food stored off the floor.
Note: Some dry goods/open boxes and bags/ stored in containers with lids.
Pest Service on site ("Kwality") - twice a month. No signs of pests activity on site at the time of inspection.
The low temperature dishwasher - satisfactory.
Ice-maker - clean; a scoop stored safely at the time of inspection.

Buffet station:
Sneeze guards - available;
Handles of scoops and tongs are not touching the food items.
Cooler - satisfactory (Recommendation: If you did not cover cold food/vegetables use ice/as an extra/ to insert containers with food - food must be <= 4.0 C).
Hot holding table at 60.0 C (small amount of food on the hot holding table/1/2 of inserts).
Reminder: Properly reheat food and the hot holding table; use 1/2 covers for containers with food/will help to keep food hot.

Front/Bar:
Hot water - available.
Ice-bin - satisfactory.
An ice- scoop is stored safely at the time of inspection.
Alcohol cooler is turned off (not in use);
Front beverage cooler at 4.0 C;

Note:
Dry walls installed in the basement. Some cleaning has been done. Old equipment and items not required for food premise operation has been removed from the basement.
