Observation (CORRECTED DURING INSPECTION): Sanitizer solution not available at front or back kitchen area. All cleaning cloths are stored on kitchen counters and prep tables
Corrective Action(s): - Fresh filled spray bottle of quats sanitizer is measured at 200ppm quats.
- Store all cleaning cloths in a bucket with sanitizer solution maintained at 200 ppm quats

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher has been replaced with a new unit. Temperature at the dish surface during final rinse cycle was measured to be at 61C during final rinse cycle after several cycles
Corrective Action(s): - Use only single use dishware for service
- Wash and sanitize utensils using manual ware washing method. Wash and rinse intwo compartment sink. Fill a large container with sanitizer solution (200ppm quats) and sanitize all utensils in that. Let it air druy for atleast 2 minutes
- Call for service of dishwasher

Observation (CORRECTED DURING INSPECTION): Handsink at the front near grill was blocked with a jug with water

Comments

- All handsinks at the front, back kitchen and washroom are supplied with hot and cold running water, soap and paper towel
- All coolers- walk-in, two prep coolers are less than 4C
- Walk-in freezer, ice cream and drawer freezers are all functional
- Hot holding unit for sauce and gravy is measured at greater than60C
- Sanitizer solution at the dispenser is measured at 200ppm quats concentration
- Food storage practices are satisfactory.
