Observation: An opened bag of pepperoni stored in stand up freezer was fully covered in thick slushie ice that was built up in the freezer. Since the ice water could be contaminated, making the frozen pepperoni in direct contact with this slushie ice unfit for human consumption.
Correction: Staff stated that they will defrost the freezer and throw out the opened bag of frozen pepperoni.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: *REPEATED VIOLATION*
3 compartment sink is used for manual dishwashing. However, as per the staff, 2 drain plugs have been misplaced.
Correction: As discussed and demonstrated during last routine and follow up inspections, to conduct manual dishwashing and to ensure adequate cleaning and sanitation of food contact surfaces, you should have 3 drain plugs on site and staff should know how to conduct the manual dishwashing. If the dishes are not cleaned and sanitized properly, it would increase the risk of potential food contamination.
- Provide 3 drain plugs
- Train your staff about proper manual dishwashing steps - wash, rinse, sanitize and air dry.

Follow up inspection conducted to routine inspection (report #TGIL-CFCRSV)

Observations:
- Frozen pepperoni bag has been discarded.
- New drain plugs have been arranged. Staff demonstrated proper manual dishwashing steps - wash, rinse, sanitize and air dry using 3 compartment sink. 100ppm bleach solution recorded in 3rd sink.
- Bleach sanitizer bottle recorded at 200ppm.
- Pressure wash was conducted yesterday to remove any dirt/food debris build up.
- General improvement noted in the overall sanitation of the facility.
- Back storage room has been cleaned and organized.
- Vents have been serviced.
- All freezers have been serviced/defrosted. No signs of ice build up observed.
Regularly clean and service the freezers to prevent thick ice build up.
- Ceiling of walk in cooler has been cleaned and found in sanitary condition.

Note:
- Back screen door has been repaired. Staff stated that the three broken tiles will be replaced soon to ensure the gap is properly sealed.
- Staff stated that the operator is in process of registering FOODSAFE Level 1 course for staff and will send a copy of registration this week.

A broken dough flattener machine was stored in washroom. Staff stated that the machine is not being used during facility operation. DO NOT STORE any food equipment in the washroom. Please store the equipment/machine offsite if it is not intended for facility operation.
