Observation: Mouse droppings emerging in the following areas:
1. Behind the dough mixer
2. Beside the 2-compartment sink
3. Behind the propane burner
4. To the left of the display cooler up-front
5. Behind the prep table
6. To the right of the laundry machine
7. Behind chest freezers in back of kitchen
Corrective Action(s): 1. Droppings will need to be removed with 1 part bleach, 9 parts water. Continue monitoring for rodent activity and consult a professional pest control company for assistance.
2. Patch up remaining holes around your walls with a metal mesh.
3. Routine degreasing of the areas will need to be conducted to ensure that there is no accumulation of oil and grime.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Area underneath pizza oven prep table still contains a substantial amount of grime.
2. Areas behind ovens, behind dough mixer, underneath warewashing sink, and underneath the stainless steel prep table still need to be thoroughly cleaned and degreased.
3. Area underneath the cook line and deep fryer area is saturated with grease
4. Inner pizza container and area above container is saturated with grease.
5. Pizza tray stoage area near back exit.
Corrective Action(s): 1. A deep clean of your facility is still required to maintain it in good sanitary condition. The aforementioned areas will need to be thoroughly cleaned to prevent attraction of pests, particularly rodents.
2. Remove all greased cardboard underneath the pizza tray.

Observation: Thin crust dough mixer present on prep table is no longer used, but is present in middle of premise.

Comments

Plumber and electrician on-site at time of inspection. Hot water has not been restored to facility. Closure order remains standing. Do not block, obstruct, remove, or deface the closure order.


- Hand wash sink adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer present in spray bottles at 200 ppm
- Walk-in cooler and prep coolers both maintain 4C or less
- Back door has been sealed with a door sweep to prevent entry of rodents

While there are minor improvements to sanitation, large areas of facility will still need to be thoroughly cleaned and degreased (see violation code 306 above). Operator has stated that renovations will occur approximately March of 2019.

Consult with the health inspector regarding the renovations before beginning.

NOTE: Your facility will need to be cleaned and degreased over the next two weeks. Perform a deep clean of crevices, especially behind all of your equipment and chest freezers. A follow-up inspection will be conducted to ensure that you maintain satisfactory sanitary standards.

NOTE: Operator has requested documentation granting for health approval when ownership was transferred. Provide a letter in hard copy requesting what is required directly to the regional manager of health protection.

You are not permitted to open your facility at this time. A follow-up inspection has been scheduled for tomorrow.
