Observation: Foods in both the walk-in cooler and the walk-in freezer are ucovered, the 5 litre pail of bread crumbs had a 2" X 4" X 1/2" thick layer of ice on it from dripping water.
Corrective Action(s): All foods must be kept covered at all times, even when cooling and/or freezing, to prevent both physical and microbial contamination.
Foods must not be stacked one on top of the other unless proper lids are in place to prevent contamination of food.

Comments

Make sure cooling foods are placed in the cooler while still warm to the touch and are cooled in shallow pans to maximize cooling.
Personal foods must be kept in a separate container, on the lowest shelf of the freezer and be clearly labeled that the food is for staff only.
All refrigeration and freezer temperatures meet requirements, dishwasher sanitizing at 73C at the plate surface.
